At my house, this is a favorite meal that can be thrown together effortlessly, and my 4 kids always cheer when it is on the menu. The approximate cost for a family of 4 to make this meal is less than $10, depending on the toppings you choose. You can spin this meal several different ways by choosing alternative toppings. We’ve made taco potatoes with taco meat, black beans, cheese and green onions. We’ve made chili and cheese potatoes, we’ve even made fajita potatoes with chicken, peppers, onions, salsa and cheese. Get creative and give your family a fun meal that won’t bust your budget 🙂
Ingredients
- 4 large russet potatoes
- Butter
- Salt & Black pepper
Optional toppings:
- Sour cream
- Chopped chives
- Grated Cheddar or cheese sauce
- Crispy bacon, crumbled or cubed ham
- Broccoli
Directions
- Preheat oven to 400 degrees F. Prick potatoes all over with a fork or sharp knife and wrap tightly in foil. Bake until soft, about 1 hour.
- Unwrap potatoes and cut lengthwise slits in the top of each. Carefully scoop out flesh from center of each potato into a medium bowl. Add butter, salt and pepper.
- Spoon filling back into each potato, mounding it on top. Sprinkle with optional toppings of your choice and return to oven until melted, about 5 minutes.
